Mitch got an awesome promotion at work this week, and I just found out that the hospital is going to cover nearly all of the enormous bill from my snowboarding accident…such a relief! It’s been a great week, and now it’s Saturday which means no work and all play
I thought I’d share this pretty strawberries and cream cake recipe with you. It was inspired by my chocolate Oreo cake, which has over 1,000 pins on Pinterest—Thanks guys!
All you need is vanilla cake mix, your favorite cream cheese frosting, 1 package of strawberries and these ingredients for the filling:
- 8 oz. cream cheese, room temp.
- 1/2 cup sugar
- 2 cups Cool Whip
Step 1: Butter two 9-inch round cake pans and line them with parchment paper. Prepare the cake batter and bake the cakes according to the box instructions. When they are finished, set them out to cool.
Step 2: Beat the cream cheese and sugar together, and then slowly add the Cool Whip. Beat on high until blended.
Step 3: Once your cakes have cooled, run a knife around the edge and flip them over to release them. Then carve the top of one so it is flat, and flip it over.
Step 4: Spoon the cream filling onto the cake and spread it evenly. Then, layer the cut strawberries onto the cake, but save some for the top!
Step 6: Place the second cake on top and fill in the holes with the cream cheese filling. 
Step 7: Frost the cake with your favorite cream cheese or strawberry frosting, and then cover it with strawberries. And that’s it!

You make it sound and look so easy! I always manage to fail when I bake, the only success I’ve really had is when I was making cookies. This looks so goooood!
