When I interned in New York this past fall, I lived in a tiny uptown apartment had only a mini fridge and a microwave, so I was very limited in what I could eat. Cereal and sandwiches became the staples of my diet, although my favorite thing to eat was chicken chili from Trader Joes.
I recently started craving chili again and came up with my own healthy version. It sure beats the tilapia and brown rice I’ve been eating!
Here’s the recipe:
Step 1: Add a tbsp. of olive oil to a pan and cook the chopped onions and garlic for five minutes, or until the onion is soft.
Step 2: Add your ground turkey and brown it with the onions and garlic.
Step 3: While the meat is cooking, pour the diced tomatoes, Rotel, and drained beans into a large pot and bring it to a boil. Reduce heat.
Step 4: Add the chopped bell pepper, chili powder, cumin and oregano to the pot and stir. Allow the mixture to simmer.
Step 5: Once the meat is thoroughly cooked, add it to the pot and mix well.
Step 6: Add the tomato paste to thicken the chili and then add your red wine. For a more Southwest flavor, try dark beer!
Step 7: Allow the chili to simmer for an hour and then serve.
I love making this because it lasts us 3 or 4 days, and it tastes better every day.
