Chocolate Peanut Butter Cake

I’m supposed to be packing right now, but I had to update. Today is Mitch’s 23rd birthday, so we’re driving up north to go snowboarding! I know, it seems like a weird thing to do during the spring, but it’s actually nice because there are no lines for the lifts. We’ve gone every year since his 18th birthday, except one year we won a trip to Vegas, but that’s a story for another time. Anyways, I thought I would share this insanely delicious recipe for chocolate peanut butter cake. I’ve been trying to eat healthy,  but it’s his birthday, and I saw this damn recipe on Pinterest and couldn’t get it out of my head.

So thank you Pinterest, for once again destroying my dream of having a toned butt by summer. Oh well.

Chocolate Peanut Butter Cake

I followed this recipe from Sugar Cooking. Isn’t hers pretty?! I haven’t mastered layered cakes yet.

Seriously though, this peanut butter cream cheese frosting is the most delicious thing I’ve ever had.

The only issue I had with her recipe was that the wax paper that I used to line the cake pans got stuck to the cake and took a lot of cake with it when I peeled them off. I think I’ll forgo this step next time, and just use butter and flour in the bottom. Also, make sure you wait until the chocolate sauce cools to drizzle it over the cake. I was in a hurry because Mitch was on his way home, so I just put it on and it melted the frosting a little and the cake started to collapse in one spot.

Besides that, it was delicious!
